CHEF SIMON

CARDINAL RESTAURANT - MATTAWA RIVER RESORT

I am very excited to be here at Mattawa River Resort.  I was born and raised in beautiful Trinidad and I began to pursue my culinary passion when I moved to Canada at the age of 18.  I was always a fan of cooking and I love food, hence my passion for culinary arts. Experimenting with different flavours, spices and techniques  I began testing my skills on friends and family who eventually pushed me to get into the culinary industry. 

 

Soon after, I got a lucky breakthrough finding my first job at Movenpick, a swiss continental style bistro in Toronto where I learned everything from seasoning & food preparation to making sauces, soups and eventually cooking meals for the guests. It was there that I began to develop and adapt my own personal style. 

 

In the years that followed, I have been privileged to work in many different settings including as Executive Sous Chef at Casa Loma in Toronto, Sous Chef at Novotel Hotel, and Boccone Italian Trattorias, as well as Banquet Chef at Universal Banquet Hall. My style is very simple, yet all about flavour and presentation.

 

I am still as passionate about what I do as I was when I started over 20 years ago.  The guest experience is what matters the most to me.  I want each guest to leave feeling that they had a great meal and a great experience dining at the Cardinal Restaurant & Lodge.  I look forward to welcoming you to join me for a meal.
