Fun Food for Your Cottage Getaway

Maybe it’s the fresh country air. Maybe it’s the physical activity and spending more time outdoors. Whatever the reason, you are sure to build up an appetite during your cottage getaway. So meals and snacks are an important part of the experience! At Mattawa River Resort, there are plenty of dining options for everyone in the family at the Cardinal Restaurant. Even if COVID restrictions mean that the restaurant is closed to indoor dining, we offer a variety of takeout options. 

Our cabins are also equipped with kitchens, outdoor BBQs and fire pits so that even if we can’t do the cooking for you, you can have some fun preparing some of these classic camping and cottage delights! 

Breakfast

It’s the most important meal of the day, and if you are planning a hike, trail ride, swimming or paddling, you’ll want to start with a full stomach. Pancakes and french toast are easy favourites, but you can also take it to the next level for those days when you’re not in a hurry. The internet is a great source of inspiration for make-ahead cottage meals like this egg-filled breakfast boat or a hearty sausage casserole. Pull apart cinnamon buns, oatmeal and yogurt parfaits, or cook up the classic back bacon and egg breaky.   

Lunch

Keep lunch simple and plan for meals on the go. Grab a loaf of crusty bread from a bakery in town for your sandwiches. Veggies and dips are also fast and portable. Hummus travels well and adding pita bread, and sliced veggies make it a healthy and filling meal. A cool crisp salad on a warm day can very satisfying and doesn’t take a lot of work to prepare. Try a colourful Cobb salad and substitute the lettuce for kale for a superfood option. Kale isn’t as likely to get damaged when packed in the cooler and tends to stay fresh longer.  

Dinner

Dinnertime at the cottage can be as easy or as creative as you want to make it. Casseroles like this chicken and broccoli pie, chilli, and other make-ahead meals like baked penne with ricotta or lasagna are excellent for a delicious dinner in a hurry. After all, unless cooking is your thing, who wants to stand over the stove all afternoon! Don’t forget that you can cook an entire meal on the BBQ, including the veggies. Bring marinated chicken breasts, chops or tofu to grill for a flavourful meal. If hamburgers or sausages are the extents of your BBQ skills, you can always dress them up with sauteed onions, guacamole, or other grilled vegetables. Even the humble hamburger can be a work of art with a few simple additions.  

Around the Fire

Kick up the classic campfire treat by adding in some additional elements to your gooey sweet s’mores. Graham crackers, marshmallows and milk or dark chocolate are the staples. Try something new by using a Reece Peanut Butter Cup instead of chocolate. Or replace graham crackers with shortbread cookies or even pretzel crackers for a whole new treat. Is sweet and salty your thing? If so, then add a cooked bacon strip to your s’more and enjoy!

Try a few healthier, yet still satisfying options for around the campfire. Split open a banana, still in the peel. Add chocolate chips and a handful of chopped walnuts or shelled pistachios. Wrap it all in foil and set in the coals for a few minutes. This warm and delicious treat is perfect for a chilly evening by the fire!
